Greek Yogurt Pancakes
1/2 cup flour, 1 tsp baking soda, pinch of salt, combined.
3/4 cup greek yogurt, 1 egg, 1 tablespoon maple syrup stirred together.
mix wet with dry.
Kat Note:
if you prefer thinner more crêpe-like pancakes
add a bit of milk to thin the batter
…heating up the turkey bacon that I pre-cooked
kept warm wrapped in a bit of foil

I sometimes pour the batter over each slice of ‘bacon’ to make a bacon pancake.
Another fun way is to pour a portion of batter in the pan, add a slice of pineapple,
flip…
and voilà!
