These tiny sprouted grains, quinoa, broccoli morsels were a bit hit…
Super for a quick breakfast on the go or a snack mid-day…
packed full of nutrition and really tasty – especially with a hit or two of Frank’s

Broccoli and Cheese Quinoa Power Bites

48 bites

2 cups cooked quinoa & sprouted grains
8 eggs
1 zucchini, shredded (about 1 cup)
1 can white beans (drained and rinsed) *
2 cups finely chopped broccoli
2 cups shredded aged cheddar
1 garlic clove, minced
1/4 cup onion, minced

*KAT NOTE:
I think chick peas would add a good ‘toothy’ texture
instead of white beans
Note to self to try next time

Preheat oven to 350°F.
Prepare mini muffin pan with a bit of olive or grape seed oil
In a large mixing bowl combine ingredients and mix to combine. Using a 1 tablespoon scoop, add 1 heaping scoop of mixture into each baking cup. Bake approximately 20 minutes, until edges are golden brown.
Let cool for 5 minutes. Remove from pan and serve.
I froze half and took the rest onboard
